Serves: 4
Ingredients:
400g pork tenderloin
2 sliced spring onions
400g of tinned black beans
100g of tenderstem broccoli, chopped
2 packets of Uncle Ben’s wholegrain 2 minute rice
60g BBQ sauce (if you’re not making your own)
Method (meat):
Grab a large pan and put on a high heat. Add a little olive oil and lightly brown off the pork loin (will only take a few minutes).
Once the meat has a little colour to it, remove from the pan, place in an ovenproof dish and put it in the oven at 160c for 14 minutes.
Once the pork is done, add the BBQ sauce and place back in the oven for a further 4 minutes.
Method (rice):
Add a few sprays of olive oil to the pan you used for the pork.
Fry the broccoli until it starts to crisp (approx 5 mins).
Lower heat and add the rice, beans and sliced spring onion and warm through, folding mixture together (be careful not over cook or the beans will spoil).
